How To Make Delicious Food
This is such a delicious recipe and will surely impress your family, friends and anyone who thinks vegan food is boring!! So soft, moist and gooey, it really is like heaven in your mouth!! So this is not a "healthy" chocolate cake recipe, but on a rare occasion, why not?

Vegan Chocolate Cake
1 cup dates
1 cup boiling water
1 tsp baking soda
1/2 cup canola oil ( or any other oil)
2 tbsp chia seeds
1 1/4 cup sugar
1 cup flour
2 tsp baking powder
1/2 cup cocoa powder
1/4 c almond milk (or other non-dairy milk)

Method: 
1) In a large bowl add your dates and 1 cup of boiling water and baking soda and set aside for 10 minutes.
2) In another bowl mix together your dry ingredients- sugar, baking powder, flour and cocoa.
3) In a small bowl or mug add the chia seeds and 8-10 tbsp water, mix and allow to stand for 5 minutes.
4) Take a fork or potato masher and mash up the softened dates until they are fully mashed a creamy (some lumps are okay).
5) Add the canola oil to the mixture and mix (the canola oil will not fully combined at first, but that is fine.)
6) Add the chia seeds to the date mixture and mix well.
7) Next add you dry ingredients and fold to combine. Note: If your batter is lumpy (which is normal) make sure to briskly mix the batter for 1-2 minutes.
8) Pour into a cake tin lined with baking paper or greased, and bake in an oven at 180 degrees Celsius for 20-30minutes checking occasionally. Stick a skewar inside to make sure its done. The cake will still be very soft so allow to cool for about 1 hour before cutting.

Note: This is a very moist and soft cake, so when you are cutting it, be careful as it can get crumbly. 

The cake is so yummy, and is already quite sweet so you will not need to ice it (although you can if you wish.) I just dusted mine with a little icing sugar.
