So today I am sharing one of my staple vegan curries! This is super fast, easy and simple to make, and tastes so wholesome, filling and delicious! Yes it is carbs or carbs, but its all good stuff!

I've been making this curry for ageees now, so it's about time I shared it with y'all! Its also got the simplest of ingredients that are likely already in your pantry!

Potato and pea vegan curry
Serves 4-5

3 medium potatoes washed, peeled and diced into small cubes
1 can tomatoes
1 cup frozen peas
1 onion diced
1 tsp each, paprika/chilli, tumeric, & ground coriander
1 tsp ginger and garlic
1/2 cup water
1. Start by frying the onions in the pot for 5-10 minutes or until brown.
2. Add the ginger, garlic and spices and fry for 2-3 mins until fragnant.
3. Add in the potatoes and mix to full combine.
4. Add the tomatoes, water and peas, and mix well.
5. Place a lid on the pot and cook for 15-20 minutes.
6. Take lid off and allow to boil for 5 minutes to allow curry to thicken slightly.
Note- check potatoes are cook, by poking with a fork.
Serve with rice
