How To Make Delicious Food
Hellooo! And welcome to November! I know, what the heck! How is there really less than 2 months of this year left!?? While I've had a pretty amazing year, as I got to travel heaps, it also feels like this year has flown by! And Christmas is literally right around the corner!

Today I come to you with a savoury recipe, I know, we don't see many of these on my blog. In the entire time I've had this blog I've shared 4 savoury recipes! And my last one was over a year ago! Savoury food is just not my specialty guys!

Anyways, today I'm sharing a totally delicious peanut and tofu curry! It is creamy, decadent and so so yum! Will go down at any dinner table! This recipe is totally vegan, dairy free and can be gluten free too!

Vegan Tofu and Peanut Curry
Ingredients
300 firm tofu*
1 onion
1 tsp each garlic and ginger
1/2 capsicum sliced
3 medium carrots peeled and sliced
1/2 can coconut milk
1/2 cup water
2 tbsp tomato paste
1 1/2 tbsp peanut butter*
3 large handfuls spinach
1 tsp tumeric powder
coriander to serve
Method
1. Start by finely slicing the onions and frying them in a pan over medium heat- add oil if needed. Allow to fry until brown, then add the garlic, ginger, tofu, carrots and capsicum. Allow to fry for 3-4 minutes, stirring to evenly coat.
2. Add the tumeric and coat all the veggies and tofu.
3. Add the coconut milk, water, tomato paste and peanut butter, and stir slowly to combine.
4. Turn heat slightly lower, place a lid over the pan and leave to cook for 10-15 minutes.
5. Once the tofu is cooked, add the spinach leaves, and turn off the heat. Place a lid over pan to allow spinach to wilt in the steam.
6. Serve with rice, and top with coriander and chopped peanuts

Ingredients with * need to be checked that they are gluten free too!

Note- you can add more veggies if you like, I just preferred these! Another great veg to use is beans if you have them!

There ya go! A hearty, warm and filling meal that will satisfy!
