How To Make Delicious Food
Christmas is almost upon us, and so I need to start getting out some recipes for y'all!! This year I have a line up of awesome vegan recipes for you guys to try out this holidays! Todays being some delicious and healthy vegan cherry ripe truffles!
So I feel like cherry ripe is one of those chocolates where you either loved it, or hated it, there is no in between! So for those of you who loved it, and are now vegan, I have a treat for you! These little truffles may not taste exactly like cherry ripe, but they are very close!

Lets just get straight into the recipe!

Cherry Ripe truffles (vegan)
200 g dates
1 1/2 cup frozen cherries, thawed
3/4 cup desiccated coconut
1 cup oat flour

350g good quality vegan dark chocolate
1 tsp coconut oil
1. Start by blitzing the thawed cherries and dates in a food processor, you should be left with a mushy mixture.
2. Fold in the oat flour and coconut, till the mixture gets thick. Leave in the fridge to firm up for 1 hour.
3. Taking tablespoonfuls of the mix, shape them into balls. Note- it is best to keep your hands wet while doing this. Place back in the fridge while preparing the chocolate.
4. Melt the chocolate in the microwave or the double boiler method. Add the coconut oil and mix in.
5.  Coat the balls in the chocolate and place on the baking sheet. Once completed with all the balls, place in the fridge for 1 hour to harden.
Place in an airtight container in the fridge for 5 days.

Done!! I hope you enjoy this recipe, and decide to give a try! Its a great, healthier alternative to store bought chocolate, but still tastes really good!
