Vegan caramel brownie slice

Today I am coming to you with a super delicious, decadent and dreamy asf recipe! A fudgy brownie topped with sweet caramel and layered with dark chocolate! I know stuffing brownies with caramel is a thing, but I feel like I haven't seen anything like this before, and its super goooood, I'm very happy with how they turned out!!


Vegan Caramel Brownie Slice
Brownie
1 cup flour
3/4 cup sugar
1 tsp baking powder
1/3 cup cocoa powder
1/3 cup oil
1 cup plant milk
1 tsp white vinegar
1 tsp vanilla essence

Caramel
300g pitted dates soaked in boiling water for 10 minutes
1 tbsp coconut oil
pinch of salt

Chocolate
100g vegan dark chocolate

Method
1. Start by making the brownies. Mix together all the dry ingredients in a bowl, then fold in all the wet until fully combined.
2. Pour brownie mix into a rectangle or square baking tin lined with baking paper. Bake at 180 degrees C for 20-25 minutes or until fully cooked. Leave to cool for about 30 minutes.
3. Next make the caramel, drain the soaking dates and either mash them with a fork, or place in a food processor. Make sure it is fully mashed. Then add the coconut oil and salt and mix through. Spread this on the brownie, and place in the fridge while preparing the chocolate.
4. Place the dark chocolate in a glass bowl, and melt in 30 second bursts in the microwave until melted (took me about 3 rounds). Spread this evenly on top of the caramel, and leave in the fridge to set for around 1 hour.
5. Remove and slice!!
