Carrot loaf with lemon icing (vegan)

Carrot loaf is one of my absolute favourite baked good (aside from banana load!), and is a winner with some people, but not with all! I don't know how I haven't already got a carrot loaf recipe on my blog, but nevertheless its now here!
This loaf is so wholesome and delicious, warm it up for a quick and easy breakfast, or pack it away for an afternoon snack! I added lemon icing for an extra tangy flavour, but that is totally optional, the loaf still tastes great without it!

Carrot loaf with lemon icing (vegan)
Ingredients
3 small carrots peeled and grated
1/2 cup applesauce
1/2 cup brown sugar
1/2 cup soy milk (or other plant milk)
1/3 cup oil
1 tsp cinnamon
1/2 tsp ginger powder
1 1/2 cup plain flour
1/2 cup wholemeal flour
1 tsp vanilla essence
1 tbsp baking powder
Optional: Dates and/or walnuts
Icing 
1 cup icing sugar
juice from 1/2 a lemon + grated zest
1-2 tbsp water
Method
1. Whisk together all the wet ingredients, then fold in the dry ingredients until fully combined.
2. Add extra soy milk if the batter is still very thick. Add in chopped dates or walnuts for extra nutrition and a delicious texture!
3. Pour into a loaf tin lined with baking paper, then bake at 180 degrees C for 30-45 minutes (will vary depending on your oven). Insert a skewer or knife to check it is fully cooked through.
4. Remove and allow to cool for 20-30 minutes.
5. To make the icing, simply mix together all the ingredients- make sure you icing is fairly thick. Pour on top of the loaf and leave for 20 minutes to set. Slice and serve!

There you have it! A wholesome and delicious carrot loaf! This is such a simple recipe, and can be whipped up the night before to pack for school lunches, or to take to work, uni or even a picnic/lunch event with family and friends!
