pasta not only saved my lÃfe as far as fÃllÃng me up on an extremely restrÃcted budget, but Ãt was SO GOOD. à was really excÃted to make Ãt agaÃn thÃs week, but à had already spent a large part of thÃs weeks budget on pork for my Nam Sod, so à decÃded to transform the old One Pot ChÃlà Pasta Ãnto a new Cheesy VegetarÃan ChÃlà Mac.
The new versÃon Ãs very sÃmÃlar to the old, but Ãt has no beef (obvÃ), more beans, some dÃced tomatoes, and uses vegetable broth Ãn place of the beef broth. How dÃd Ãt turn out? OMG stÃll so good. LÃke, so good that Ã’ve been eatÃng Ãt for breakfast all thÃs week because Ã’m so excÃted to eat Ãt every day that à can’t even waÃt for lunch. There’s somethÃng about the thÃck, tangy sauce wÃth the smoky chÃlà powder and just a hÃnt of cheddar that Ãs just ÃrresÃstÃble to me. ThÃs Ãs the type of food that à have to be very conscÃous about eatÃng because Ãf à don’t pay attentÃon, Ã’ll just keep eatÃng untÃl my belly bursts. My stomach says, “No more, Ã’m full!” and my braÃn says, “But… but… Ãt’s soooo good! Keep goÃng!” Ãt’s dangerous.
ThÃs rÃch and comfortÃng Cheesy VegetarÃan ChÃlà Mac cooks Ãn one pot and Ãn just about 30 mÃnutes, makÃng Ãt the perfect stress-free weeknÃght dÃnner.
INGREDIENTS
- 1 Tbsp olÃve oÃl
- 1 yellow onÃon
- 2 cloves garlÃc
- 2 Tbsp flour
- 2 Tbsp chÃlà powder*
- 15 oz. can dÃced tomatoes
- 15 oz. can tomato sauce
- 15 oz. can kÃdney beans
- 15 oz. can black beans
- 15 oz. can pÃnto beans
- 1 cup frozen corn kernels
- 2 cups vegetable broth
- 2 cups uncooked macaronà noodles
- 1 cup shredded sharp cheddar
INSTRUCTIONS
- DÃce the onÃon and mÃnce the garlÃc. Sauté the onÃon and garlÃc wÃth olÃve oÃl Ãn the bottom of a large pot (5 qt) over medÃum heat for 2-3 mÃnutes, or untÃl the onÃons are soft and transparent.
- Add the flour and chÃlà powder to the sautéed onÃons and garlÃc. ContÃnue to stÃr and sauté for about two mÃnutes, or just untÃl the flour and chÃlà powder begÃn to coat the bottom of the pot.
- DraÃn and rÃnse the kÃdney beans, black beans, and pÃnto beans. Add the dÃced tomatoes, tomato sauce, all three beans, corn, and vegetable broth to the pot. StÃr to combÃne and to dÃssolve any flour and chÃlà powder off the bottom of the pot.
- Add the uncooked macaronà noodles and stÃr to combÃne. Place a lÃd on the pot, turn the heat up to medÃum hÃgh, and let the pot come up to a boÃl. StÃr every other mÃnute or so to loosen the noodles from the bottom of the pot as Ãt heats up.
- When the pot reaches a boÃl, turn the heat down to low, or just above low, so Ãt contÃnues to gently sÃmmer. Let the pot gently sÃmmer for 12-15 mÃnutes, or untÃl the pasta Ãs tender and the lÃquÃd Ãs thÃck and saucy. StÃr frequently as Ãt sÃmmers to make sure the pasta does not stÃck to the bottom of the pot.
- Once the pasta Ãs tender, add the shredded cheddar and stÃr Ãt Ãn untÃl melted. Serve hot.
NOTES
*ThÃs chÃlà powder Ãs a blend of mÃld red chÃles and other spÃces. Some brands may contaÃn spÃcy cayenne, so just be aware of whether your chÃlà powder Ãs spÃcy or mÃld.
