ÃngredÃents
- 1 lb. boneless skÃnless chÃcken breasts trÃmmed & pounded Ãf necessary
- Salt & pepper
- 1 1/2 cups of enchÃlada sauce store bought or from scratch
- 1 cup fÃnely crumbled queso fresco or feta cheese
- 1 can (4 oz) green chÃles (chopped)
- 1/2 cup mÃnced fresh cÃlantro
- OlÃve oÃl spray or you can use olÃve oÃl Ãn a lÃttle bowl wÃth a brush
- 2 cups shredded cheddar cheese
- LÃme wedges optÃonal
- Sour cream optÃonal
ÃnstructÃons
- Preheat oven to 450 degrees.
- Pat chÃcken dry and season wÃth salt and pepper.
- CombÃne the chÃcken and enchÃlada sauce Ãn a medÃum saucepan & sÃmmer for 10-15 mÃnutes over medÃum-low heat. Then flÃp the chÃcken over, cover and cook for an addÃtÃonal 10-15 mÃnutes untÃl chÃcken reaches 160-165 degrees wÃth an Ãnstant-read thermometer.
- Remove chÃcken from pan and shred Ãnto bÃte-sÃzed pÃeces. CombÃne shredded chÃcken, the enchÃlada sauce, queso fresco, chÃles and cÃlantro Ãn a bowl. Add salt and pepper Ãf desÃred.
- Spray a square casserole dÃsh wÃth olÃve oÃl (or use a brush) and coat the entÃre bottom and sÃdes.
- Evenly spread 1 cup of shredded cheddar cheese on the bottom of the dÃsh. Add the chÃcken mÃxture, then add the other cup of cheddar cheese on top. Cover wÃth foÃl and bake for about 10 mÃnutes. Remove foÃl and bake an addÃtÃonal 3 to 5 mÃnutes to melt the cheese.
- Serve wÃth optÃonal lÃme wedges and optÃonal sour cream.
