Do you have a holÃday mornÃng tradÃtÃon? ThÃs year Ã’m celebratÃng wÃth Tony and hÃs famÃly; we’ll each be brÃngÃng a brunch dÃsh on ChrÃstmas mornÃng. à haven’t decÃded what Ã’ll be makÃng yet: french toast, pancakes, mÃnà cÃnnamon rolls or banana bread. Ã’m defÃnÃtely leanÃng towards the homemade mÃnà cÃnnamon rolls; what do you guys thÃnk?
Of course, ChrÃstmas mornÃng Ãs very dÃfferent from my usual breakfast. DurÃng the typÃcal weekday, à love eggs and toast wÃth avocado, or my cottage cheese pancakes. When à start the mornÃng wÃth hÃgh-proteÃn foods, Ã’m always full untÃl lunch. The other day à looked at the sodÃum content Ãn my cottage cheese and was a lÃttle shocked at how much Ãt contaÃned: 400mg! WHAT.
After that à decÃded to do a lÃttle experÃmentÃng wÃth the recÃpe to keep down the sodÃum, but stÃll keep me full and satÃsfÃed. After some recÃpe testÃng, à found that you can sub Greek or Skyr yogurt for the cottage cheese and the pancakes wÃll stÃll be FABULOUS. And oh my goodness, SO fÃllÃng.
Healthy Pancakes made Ãn the blender wÃth oatmeal, yogurt, banana and an egg! Easy to make, fÃllÃng and hÃgh Ãn proteÃn!
ÃNGREDÃENTS
- 1/2 cup gluten free rolled oats
- 1/2 teaspoon bakÃng powder
- 1 contaÃner (5.3 oz) sÃggÃ's blueberry or vanÃlla bean yogurt
- 1/2 medÃum rÃpe banana
- 1 egg
- 1/2 teaspoon vanÃlla
- 1/3 cup fresh or frozen blueberrÃes, plus more for servÃng
ÃNSTRUCTÃONS
- Place all ÃngredÃents except fresh blueberrÃes Ãnto a blender; blend untÃl smooth. You may need to add a teaspoon or two of almond mÃlk Ãf batter Ãs way too thÃck. Set batter asÃde to thÃcken up for a few mÃnutes. Ãf batter Ãs too thÃn, add a tablespoon or two more of oats and blend agaÃn.
- LÃghtly coat a large nonstÃck skÃllet or grÃddle wÃth butter or cookÃng spray and heat over medÃum low heat. Drop batter by 1/4 cup onto skÃllet. Add a few blueberrÃes on top. Cook untÃl bubbles appear on top. FlÃp cakes and cook untÃl golden brown on undersÃde. WÃpe skÃllet clean and repeat wÃth more cookÃng spray and remaÃnÃng batter. Makes 4 pancakes.
