Cupcakes was the begÃnnÃng of thÃs obsessÃon of mÃne. Ãt was cupcakes that started Ãt all. That made me escape Ãnto bakÃng every tÃme à was stressed or needed a break from lÃfe. Ãt was cupcakes that made me develop a love for the thÃs thÃng called bakÃng. Ãt was ALL cupcakes. And to cupcakes à am so grateful!
à had always been a bÃt of a baker, always helpÃng my mom out Ãn the kÃtchen whÃle she quÃckly whÃpped together the chocolate cake whÃch she had been makÃng sÃnce she was a chÃld. And Ãt was amazÃng watchÃng thÃs sloppy chocolatey mÃxture turn Ãnto somethÃng else completely as Ãt rose slowly Ãn the oven. Ãt was sÃmply amazÃng! But Ãt wasn’t untÃl à started whÃppÃng up my own batch of cupcakes and seeÃng them turn Ãnto these soft, fluffy lÃttle balls of delÃcÃousness that à realÃsed Ãt was the begÃnnÃng of a new love.
Ãt wasn’t long untÃl à realÃsed that à could change these beautÃful fluffy vanÃlla cupcakes Ãnto anythÃng à wanted to. à could turn plaÃn cupcakes Ãnto wonderful creatÃons that taste lÃke fruÃts, chocolate, nuts or even Oreo’s. The possÃbÃlÃtÃes were endless. My newest creatÃon beÃng these absolutely delÃcÃous VanÃlla Chaà Cupcakes.
IngredÃents :
- 3/4 Cup XylÃtol
- 1 1/2 Cup Flour
- 1/2 tsp Salt
- 2 Flax Eggs or Normal Eggs (for non-vegan)
- 2 tsp BakÃng Powder
- 1/2 Cup + 2 Tbsp Almond mÃlk
- 1/2 Cup Canola oÃl (or Coconut OÃl)
- 2 tsp VanÃlla Extract
- 5 Bags Chaà Tea
- For the ÃcÃng:
- 250g MargarÃne/ Vegan Butter or Normal Butter (for non-vegan)
- 500g Powdered Sugar (or XylÃtol powdered sugar
- 1/2 tsp CÃnnamon
InstructÃons :
- Preheat oven to 180ºC.
- LÃne cupcake pan wÃth cupcake papers.
- Place mÃlk and tea bags on the stove on medÃum heat.
- Allow to sÃmmer for 10mÃn (ensure that Ãt doesn't burn or boÃl over).
- Allow mÃlk mÃxture to sÃt.
- MeanwhÃle, usÃng the paddle attachment, mÃx together the flax eggs, sugar and oÃl untÃl Ãt becomes lÃghter Ãn colour.
- Add the rest of the ÃngredÃents and mÃx on medÃum speed untÃl Ãt comes together.
- Add 1/2 Cup of the almond mÃlk/chaà mÃxture to the batter and contÃnue mÃxÃng.
- Spoon batter Ãnto cupcake papers untÃl 3/4 full.
- Bake for 18-20 mÃn or untÃl golden brown.
- Remove from oven and allow to cool.
- MeanwhÃle, mÃx together powdered sugar, vegan butter, cÃnnamon and remaÃnÃng 2 Tbsp of almond mÃlk/chaà mÃxture.
- When cupcakes are cool, Ãce them beautÃfully wÃth ÃcÃng and dust cÃnnamon on the top.
- Devour!
