How To Make Delicious Food
I have never actually made rocky road before! But when I finally bought a packet of vegan marshmallows, I know some rocky road had to be made! Quite honestly, I have never been a huge fan of marshmallows, even non-vegan ones, but the vegan ones I bought- from Dandies are so yum, and taste almost exactly like non vegan marshmallows. Also vegan marshmallows can be way more expensive in comparison to non vegan ones, however I personally think that they are worth it, especially since they do not contain gelatine (which I highly recommend you look into, because it is nasty as stuff!)


This rocky road is super chunky, chocolatey and so so yum! The best thing about rocky road, is that you can basically put in whatever you like, and it's guaranteed to turn out good! Best thing is that this takes less than 5 minutes to whip up! This recipe is also gluten free (depending on what brand of chocolate and marshmallows you use!)

Vegan rocky road
Makes approx. 8 pieces
Ingredients
1 1/2 cups choc chips
1 handful vegan marshmallows
1/2 cup candied red cherries
2 tbsp. pecans
3 tbsp. chopped roasted peanuts
desiccated coconut for topping
Method
1. In a medium sized bowl, melt the chocolate in whatever way you prefer (microwave/double boiler method).
2. Chop up the marshmallows and roughly chop the pecans.
3. Once the choc had melted, place all of the other ingredients, except the coconut, into the bowl and thoroughly mix.
4. Pour rocky road mixture into a rectangular tray lined with baking paper, and press down and evenly spread out. Sprinkle over the coconut.
5. Place in the fridge for 1 hour to set. Then remove and cut into squares!

Other options:
Feel free to add in whatever you like, that's the best thing about rocky road, it's so versatile!
- peanut butter- melt with the chocolate
- almonds
- chopped dried apricots
- white choc chunks
- plain tea biscuits
